Orange Cocoa Date Peanut Bites

I had such a great time making cocoa date cashew bites, that I was excited to make a new flavor! I love the addition of orange in the new recipe – hope you do too!

Orange Cocoa Date Peanut Bites

by Katie Heddleston

Prep Time: 30 minutes

Ingredients (66 bites)

  • 2 1/3 cups pitted dates
  • 2 cup raw peanuts
  • 4 tablespoons flax seed
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract

Instructions

Using a food processor, pulse dates, peanuts, and flax seed together. Do not pulse too long, as the oils from the peanuts will beging to seep out.

Add the cocoa powder, vanilla extract, and orange extract. Pulse until mixture is able to press together and stay in a ball form.

Form mini balls. This is the longest part of the process. I made the balls fairly small (1-2 bite size) and it made 66 balls.

Freeze balls for 20-30 minutes. Remove and place in refrigerator for consumption through the week. You may freeze all or part of the batch.

Enjoy!

These look good. I will sub cashews or hazelnuts but the idea is the same. Thanks.

Yup! So many variations possible! My first date bites had cashews and oats included and these I went with peanuts and flax. So fun to think of new combos!

I’m no baking expert, so this may be a stupid question…but is there any alternative to using a food processor? I don’t have one but would love to try out this recipe :)

I think I replied via email to this – but wanted to make sure I responded here. I think a blender could work!!
