{Gluten Free} Chocolate Mint Truffle Cookies

If you follow me on Facebook, I teased you with this image yesterday! I thought I wouldn’t make you wait too long for the recipe, because these are certainly a festive treat!

John and I both love the combination of mint + chocolate, so when we bought a bag of Mint Truffle Hershey Kisses, I was destined to create a recipe like this. Enjoy!

Gluten Free Chocolate Mint Truffle Cookies

Prep Time: 10 minutes

Cook Time: 12 minutes

Ingredients (~30 cookies)

  • 2/3 cup butter or margarine
  • 1 cup + 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 1-2 teaspoons peppermint extract
  • 2 eggs
  • 2/3 cup sweet rice flour
  • 1/3 cup tapioca flour
  • 1/3 cup garbanzo bean flour
  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon baking soda
  • Mint Truffle Hershey Kisses – unwrapped. You’ll need one for each cookie. Approximately 30 kisses.

Instructions

Preheat oven to 350 degrees.

Combine butter, water, sugar, peppermint extract, and eggs. Beat well. (I made these by hand but you can quicken the process with an electric mixer).

Add in flour, cocoa, and baking soda. Mix mix mix!

Drop batter by spoonfuls on cookie sheet.

Bake for approximately 12 minutes or until done.

Allow cookies to cool on pan for 5 minutes. Transfer to cooling rack and place Mint Truffle Hershey Kiss on top of each cookie.

Place in refrigerator to set if desired (or rub the kiss around the warm cookie and create a yummy, sloppy, chocolate mint mess!)
