
I think I’ve given John Brussels sprout overload this fall. Good thing he knows how much I enjoy them when they’re in season! Plus, anytime I made a huge batch of this skillet and have leftovers, it’s so easy to throw the reminder in a quiche and have another (but different) meal including the beloved sprouts!
Brussels Sprout Bacon Skillet

Prep Time: 10 minutes
Cook Time: 10 minutes
Keywords: sauté dry heat side gluten-free brussels sprouts fall
Ingredients (4 servings)
- 1/4 white or sweet onion chopped
- 20 Brussels sprouts sliced/chopped
- 1 carrot grated
- 5 slices bacon or turkey bacon
- Sprinkle of cheddar or parmesan cheese
- Olive oil for skillet
- Seasonings such as: garlic, parsley, oregano, etc.
Instructions
In a medium skillet, heat oil briefly. Add in onions and desired seasonings.
Once onions have wilted down a bit (and give you that awesome onion smell), add Brussels sprouts, carrots and bacon.
Sautee it all up!
Plate and sprinkle on a touch of cheese.

I would love to try this recipe… but I don’t know if I like Brussel Sprouts because I’ve never had them and they get such a bad reputation as being horrible. Josh doesn’t like them… did you and John always enjoy eating Brussel Sprouts?

Hey Shannon! Katie, I think, enjoyed brussel sprouts prior to the dish but I didn’t. I actually find them quite tasty when mixed with bacon and cheese. This is a pretty easy dish to make and sprouts and bacon and cheese isn’t super-expensive. Might be worth a try for you guys, even if Josh isn’t thrilled about sprouts.
Looks pretty good! I’m not a HUGE fan of brussel sprouts, but I know my mom is, so I try to cook them for her.

I love love love brussel sprouts. So good! I usually roast them with a bit of olive oil and salt and pepper.
