Oatmeal White Chocolate Chip Muffins

Since we’ve been talking about birthdays all week, I thought it was fitting to post a yummy recipe today! It’s not cake, but it’s certainly a yummy muffin!

Thank you soooo much for all your birthday wishes toward both myself and my dad. We really appreciate it and I appreciate you so much! Hope you enjoy the recipe — John and I both loved these, so please let me know if you end up making them!!

Oatmeal White Chocolate Chip Muffins

Cook Time: 15 minutes

Ingredients (12 muffins)

  • 1 1/2 cups quick oats (buy gluten free if you want this to be gf!)
  • 1 1/4 cups milk (I just used skim milk but you could use whatever type you wanted here!)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup garbanzo bean flour
  • 1/2 cup buckwheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup brown sugar
  • 1 egg
  • 1/4 cup canola oil
  • 1 cup white chocolate chips

Instructions

Line a muffin tin with muffin cup liners or coat with cooking spray.

Preheat oven to 400 degrees.

Combine the first 4 ingredients and set aside. This mixture will thicken up a bit (this is what you want!)

Combine the rest of the ingredients, except the white chocolate chips, and stir.

Add in oatmeal mixture to the rest of the batter.

Stir in the white chocolate chips.

Spoon batter into muffin cups with even proportions.

Bake for 15 minutes.

    Oh yum! Those look/sound so good! I’m bookmarking it to try sometime with perhaps just subbing in applesauce or something for the oil and maybe some stevia for the brown sugar…then again, sometimes it doesn’t taste as good without the fat and sugar, lol. Thanks for sharing your recipe! :) P.S. Your picture on the side totally reminds me of the actress who plays Bones (forget her name)!

    I’m not sure if my other comment went through, but those look/sound so good! I’ll be bookmarking/printing it! :) I may try subbing the oil for applesauce and maybe the brown sugar for part or all stevia. Thanks for sharing your recipe! :)

    Mmmm these look delicious! I’ve never made a muffin with chocolate chips in it before, that sounds cool.
