Gluten-Free Banana Chocolate Chip Muffins

I love buying the bags of ripe bananas at the store. Sometimes I get a little overzealous and end up with way too many! For this recipe I had 4 bananas to use up and these muffins were born!

Gluten-Free Banana Chocolate Chip Muffins

Cook Time: 15-20 minutes

Ingredients (16 muffins)

  • 4 bananas – smashed
  • 1 egg
  • 2/3 cup brown sugar
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons flaxmeal
  • 1/2 cup garbanzo bean flour
  • 1/2 cup sweet rice flour
  • 1/2 cup buckwheat flour
  • 3/4 cup mini chocolate chips

Instructions

Combine bananas, egg, brown sugar and vanilla. Mix well.

Add cinnamon, baking soda, baking powder, flaxmeal and all the flours. Make sure you get all the flour chunks out.

Fold in the mini chocolate chips.

Bake for 15-20 minutes at 350 degrees.

    Yum! Banana and chocolate is a perfect combo. Where do you get all your various flours?

      You can buy various flours at wegmans, whole foods, trader joes, giant eagle, and probably harris teeter too. Lots of supermarkets are making them available, now it’s just about finding the best price. I actually buy my garbanzo bean flour and all purpose gluten free flour via amazon in bulk so it’s cheaper and since I go through those two flours quicker than the others.

    Just baked these and they are delicious!! Thanks so much for an awesome GF recipe. I didn’t have the flour blend your recipe called for so I substituted in an all purpose gf blend and added xanthan gum and they turned out fabulously! They look just like regular wheat muffins and taste divine. Thanks so much! (and I now have your pumpkin muffins in the oven, cant wait to try them too!) :)
