I love chocolate and I love peppermint. These cookies are a winning combination! They actually remind me of meringue cookies that my Grammy used to make — anyone know what I’m talking about? Anyway, these cookies would be a hit around Christmas time when those two flavors are all over the place or you can just make them for your enjoyment anytime.
Chocolate Peppermint Cookies
Prep Time: 20 minutes
Cook Time: 10-12 minutes

Ingredients (22-24 cookies)
- 1.5 cups powdered sugar
- 2/3 cocoa powder
- 2 large egg whites
- Pinch of salt
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon pure peppermint extract
- 1/2 cup Andes creme menthe baking chips
Preheat oven to 350 degree.
In a medium bowl, sift together the powdered sugar and cocoa.
Using a stand or hand held electric mixer, combine egg whites and salt. Using the highest speed, beat until a soft peak forms.
Add the cocoa/powdered sugar mixer little by little, until thoroughly combined.
Set electric mixer on low. Mix in the vanilla and peppermint extracts.
Hand mix in the creme menthe baking chips.
Drop cookies on to a cookie sheet. This recipe made 22 cookies for me. It’s okay for the top of the cookies to crack a bit — just gives them a little character.
Allow cookies to cool on cookie sheet before moving them to a wire rack to cool.
