A Holiday Menu by the Lean Green Bean

Hello HH readers! I’m Lindsay and I blog over at The Lean Green Bean. I’m so excited to be guest posting for Katie during this amazing time in her life! Katie’s one of my idols since she’s already an RD and that’s what I’m in school studying to become. Even though we’ve never met in real life, I always feel just a little bit more connected to those who share the same passion as I do for nutrition and dietetics.

When Katie emailed me to ask if I would be interested in doing a guest post for her, I may or may not have actually let out a little squeal of excitement! I immediately said yes and started brainstorming. She asked me to feature some of my favorite recipes and I wanted to come up with a fun way to share them with you.

So, seeing as it’s the holiday season, and you may be spending a bit more time with family and friends than you usually get to, I thought it would be fun to put together a little menu for you guys. Essentially, I’ve planned you an easy, healthy dinner party that you could serve to your family or a group of your friends. You can thank me later.

Side note- Back in August, my hubby and I challenged ourselves to go vegetarian for a month….we did it successfully…and then we just never stopped! So, this menu is mainly vegetarian, but I did provide an alternate meat entree for you!

Let’s break it down a little further shall we?

Appetizers

Appetizers: -The mini bruschetta cups are totally adorable, yet at the same time look super fancy…but don’t let that fool you, they’re a cinch to make. -The mushrooms contain the best mushroom stuffing combo I’ve ever had! Goat cheese and cranberries go really well together. -As for the crackers, they’re really basic and it’s so cool to be able to say you made them yourself! -I like sweet potato hummus because it’s a fun change but feel free to sub your favorite flavor, OR like I recommend in my post- add a bulb of roasted garlic and a roasted red pepper along with the sweet potato to make my favorite hummus of all time!

Soup & Salad: -The soup is perfect for fall & winter, packed with flavor and really easy to make because everything gets blended together so you don’t have to worry about cutting everything the same time! -The salad is a favorite of mine. I LOVE spinach and strawberries together and the dressing pairs with it perfectly.

Main Dishes: -I know it sounds crazy, but I think tacos are the perfect food for a dinner party. They’re so easy to customize because people can make their own and put whatever they want in them. I love the sweet potato and black bean combo, but you could also cook up some chicken or beef as an option, and lots of veggies for people to add. -If you’re looking for something a little fancier, this chicken is easy and looks nice and fancy! You can use the leftover goat cheese from your appetizer to stuff the chicken.

Sides

Sides: -Balsamic veggies are one of my favorite side dishes. Just cut everything up and throw them in a Ziploc bag with some balsamic vinegar to marinate, then put them on skewers and grill them or toss them on a different tray and throw them in the oven at the same time you’re roasting the sweet potatoes for the tacos! -Zucchini fries are a fun twist on traditional French fries. They actually get pretty crispy and are great dipped in marinara sauce.

Cookie

Desserts: -The cookies are one of my own flavor combinations. I love ginger cookies and these mix-ins really take them over the top. -The banana bites are one of my favorite dessert treats. They’re fun to make and not your typical party dessert.

Life update: John and I have gotten a TON of unpacking and organizing done in these few short days. I will do a move update as soon as I can! We finally got internet last night and I wrote my first post too — all about the baby of course! We also put our Christmas tree up and decorated. We’re very excited to find a church to attend and enjoy our first Christmas service with them (actually, Christmas mass will be our first mass at the new church since we’re our of town this weekend!) Hope we pick a good one!

    Everything looks to die for!! I’d be most excited to try the sweet potato hummus, bruschetta cups, and zucchini fries.

    Ohhh man those bruschetta cups sound SO delicious! And I love zucchini fries! They’re healthy but they taste so decadent!
